  Application  

The nougat bar production line is a specialized equipment used for manufacturing nougat bars, which can realize the automated production from raw material processing to finished product packaging.

The following is a detailed introduction:

1-Ingredient Preparation: Prepare granulated sugar, glucose syrup, honey, egg whites, roasted nuts, dried fruits, gelatin and other stabilizers. Heat the granulated sugar, glucose syrup, and honey to 130°C - 150°C to reach the "hard crack" or "soft ball" stage, and whip the fresh or powdered egg whites into stiff peaks.

2-Mixing and Cooking: Gradually pour the hot syrup into the egg white foam while continuing to whip, and add stabilizers such as gelatin as needed to improve the elasticity of the nougat. Strictly control the temperature during the mixing and cooking process to avoid issues such as graininess or excessive hardness in the nougat.

3-Incorporating Additives: Fold roasted nuts, dried fruits, chocolate chunks, and other additives into the nougat mixture, and use modern machinery to evenly distribute them without crushing the additives.

4-Forming and Shaping: Pour the viscous nougat mixture into molds dusted with starch or lined with rice paper, and use rollers or presses to compact the nougat to make its thickness uniform.

5-Cooling and Cutting: Cool the nougat slabs at controlled humidity levels for 12 - 24 hours to prevent cracking. Then, use an automated cutter to slice them into retail - ready portions.

6-Packaging: Use wrapping machines to seal individual nougat pieces or pack them in bulk, and there are options for vacuum sealing to extend the shelf life of the nougat.
